Discover the authenticity of our pizzas at Pizzeria del Melograno, where we exclusively use local ingredients and ancient grain flours. We use flours from Mulino Le Pietre, with a high protein content, the ideal choice for making crispy pizzas and high hydration doughs. Thanks to the long fermentation times, exceeding 24 hours, our pizzas and focaccias are extremely digestible. This flour, with a protein content of over 14% and a strong W value (over 290), allows for high hydration, over 70%, and ensures optimal stability during dough processing even with a reduced amount of yeast. These flavorful and nutritious flours give our pizza a unique taste and a light and digestible dough.

Each pizza is a celebration of the territory, with ingredients selected directly from local producers, ensuring freshness and quality in every bite. Attention to the origin of the ingredients not only enhances the taste but also supports the local economy and promotes sustainability. Our pizza base is prepared with care and dedication, using high-quality flours and a traditional fermentation process. The dough, made from selected flours with an ideal hydration of 65%, undergoes a 30-hour maturation process, followed by a 6-hour fermentation at room temperature. This attention to detail ensures a light and fragrant texture, making every bite a unique and unforgettable experience.

We follow the philosophy of seasonality, so some of our pizzas vary depending on the availability of fresh ingredients, such as pumpkin, artichokes, and asparagus.
